On June 20th, the patrons of the Fairbury, IL food pantry got a treat: a round of Noodles Supreme. The easy-to-make dinner was again met with rave reviews. Comments included: “Even my kids will eat this!” and “Can I try another sample? This is good!”. One of the folks even tried to walk off with the entire pot!!
Almost all of the items used in the recipe were available at the food pantry that day, except for the onion and cabbage.
Our goal was to help patrons identify easy recipes that they were likely to cook which included vegetables in the mix.
Recipe is below:
What You Will Need -
Cup - to measure cooked noodles, beans, and water
Sharp Knife - to chop onions and cabbage
Pot With a Lid - big enough for 10 cups of stuff
Spoon - to stir
Can Opener - to open the cans
Onion - 1 large sized
Cabbage - 1 medium head
Ground Meat - 1 pound (1 lb.)
Salt - 2 pinches (to taste)
Black Pepper - 1 pinch (to taste)
Soft Beans (can be canned or from dried) - 1 cup
Diced Tomatoes - 1 can
Tomato Soup - 2 cans
Water - 2 cups
Cooked Noodles - 3 cups
1. Make sure to cook your noodles ahead (not mushy). Drain them, add a little oil, and set aside in a bowl.
2. Take the skin off the onion and chop it up.
3. In the pot, put the ground meat and the onion. Turn the stove to medium and keep stirring as it cooks.
4. As the meat and onions cook, open all the cans. Drain the liquid off of the diced tomatoes and beans. Chop up the cabbage into 1 inch squares.
5. When the meat and onions are done (all brown and no pink shows in the meat), add the cabbage, salt, pepper, soft beans, diced tomatoes (drained), tomato soup and water. Cook until cabbage is soft.
6. Carefully add the noodles and gently stir. Turn off the stove. Serve in bowls.
