Join Spence Farm Foundation and Chef Greg Wade at Spence Farm, where Chef Greg will discuss and demonstrate how to make old world breads using several varieties of spring wheats, rye, Tibetan barley and possibly the rare Einkorn wheat grown on Spence Farm. It is a day where professional chefs come together on Spence Farm to learn more about the art of bread baking and to see first hand where these ingredients are grown. It is a true farm to table experience. In this hands-on workshop, attendees will also make their own bread using our outdoor kitchen’s clay oven and pizza oven. While the bread bakes, we will prepare small plates to share as a community.

 

This event is intended for professional chefs interested in baking, different varieties of heirloom grain, or toward professional bread bakers who want advance their skills. Bread camp costs $200 and takes place on Spence Farm in Fairbury.
